What is Provolone?

The term provolone means “large provola” and appeared for the first time around the end of the 19th century, when it started to be manufactured in the southern regions of Italy. The smaller sized variant is called provola and there is a difference between the simple one and the smoked one varieties.

Provolone is an Italian cheese made from cow’s milk whose origins lie in Southern Italy. It has found its home production in the Po valley region, in particular in Lombardy and Veneto, in the northern of Italy.

Provolone Valpadana and also Provolone del Monaco are granted DOP designation by the European Union to ensure that

“cheese is produced under strict supervision using specific methods to guarantee supreme quality”

Protected Designation of Origin – EU

It can also be classified into two forms: Provolone Dolce, aged 2-3 months, and Provolone Piccante, aged more that 4 mounths. The first has sweet taste and a pale yellow to white colour; the second one has a sharper taste.

Provolo cheese, nutritional values

From a nutritional point of view provolone contains an high amounts of calcium and protein, but it is also high in sodium. You can taste the cheese with meat and aged red wines. At the table, it could be served with homemade bread and flatbread.

Provolo cheese is also great for sandwiches or you can put it in addition to a cheese plate, as a snack or as a topping into salads, savoury cake.

Pay attention: provolone is not mozzarella! But it can be a close relative. Mozzarella is fresh and mild in flavour and you can use it to make pizza.
