They are close relatives of chiacchiere and struffoli, and are scrumptious and soft fritters made with a simple and genuine dough consisting of flour, sugar, eggs, and butter. They are fried and then, the magic happens… dipped in granulated sugar! How many did you eat as a child? Over time, the recipe has undergone various variations, all delicious! Today, Panificio Rescigno presents you with Pear and Vanilla Castagnole: a true treat! A little curiosity: the Castagnole dough, contrary to its name, does not contain chestnuts or chestnut flour. The name is due to the fact that the ideal size, for optimal cooking, should not exceed that of a walnut!
