The history of this variety dates back to the early 1900s when Nazareno Strampelli started some experimental trials on the fields made available by the Marquis Cappelli, obtaining the so-called ‘selected seeds,’ among which is the Cappelli.
The entire harvest, under the coordination of our partner Mediterre.bio, is traced and controlled to be processed by our partner Molino De Vita. In a green area, far from major communication routes, the mill transforms the wheat into semolina using advanced technologies and low-speed grinding cylinders that preserve the grain’s qualities as much as possible. Finally, the semolina travels to Trentino where the spring water from the Alps meets the expertise of the Felicetti pasta makers, who are also partners of Alce Nero, giving life to 100% Italian, organic pasta guaranteed by the Alce Nero Group partners.
