Carnival fritters, known as ‘Castagnole’ or ‘Favette’ depending on the region, are a typical sweet treat. Siblings of ‘chiacchiere’ and ‘struffoli’, they are soft and delicious fritters made with a simple batter of flour, sugar, eggs, and butter. Once fried, the magic happens… they are rolled in granulated sugar! How many have you eaten during Carnival parades? Over time, the recipe has generated various delicious variations! Today, Rescigno Bakery presents the Lemon and Vanilla Castagnole: a true treat! A little curiosity: despite the name, the batter for Castagnole does not contain chestnut flour. The name is due to the fact that for optimal cooking, they should not exceed the size of a walnut!
