Baldo, Rosa Marchetti or Ribe, Italian native varieties created in 1964 for the first two and in 1961 for Ribe, used distinctly according to the availability of our farmers and as indicated on the identity card. Sensory characteristics and cooking times are similar.

Cultivation
According to organic regulations. Rotation with cereals, soy, alfalfa, protein peas, and legumes. Fertilization with organic fertilizer (vegetable compost, bovine manure, green manure, and legumes).
Soil management
Leveling to eliminate water stagnation, plowing, false sowing to eliminate weeds, weed control through manual and mechanical methods.
Treatments
Only if necessary and according to organic regulations.
Yield
Average yield of 4 tons/hectare.
Irrigation
Submersion with water from springs, irrigation consortium, and Ticino River.
Harvest
From September to October with combine harvester. The stubble is mowed and plowed back into the field.
Post-harvest and processing
After drying with hot air, the rice is delivered to the rice mill and stored in dedicated silos. It then undergoes mechanical cleaning to remove impurities, husking with a roller machine to remove the hull, optical selection with an optical sorter, vacuum packaging.

Organic rice cultivation is one of the most demanding and requires a lot of work, often manual, due to the presence of weeds. Among the weeds, wild rice is the most common; we limit its growth by manually weeding the fields and using the harrow.
