Narrative label
The Cereal
The spelt used for the production of this biscuit belongs to the species Triticum Dicoccum. It is one of the oldest cereals cultivated by humans, with origins dating back over 5000 years ago in the Fertile Crescent. It is a plant particularly suitable for cultivation in otherwise unproductive soils thanks to its tall size, which guarantees good resistance against weeds, and its very developed root system that can reach the deeper layers of the soil.
Cultivation
This ancient cereal is suitable for nutrient-deficient soils. Cultivation is included in crop rotations, generally after legumes, to make use of the residual fertility of the soil. No synthetic chemical products are used in compliance with organic regulations.
Processing
The dough is obtained through two distinct phases: first, an emulsion is created with extra virgin olive oil and sugars that will give the final product the right crumbliness, and then it is mixed with the flour. The resulting dough is then introduced into the rotary cutter where it takes shape through a mold. The biscuit is baked in the oven and subsequently allowed to cool slowly to preserve the final taste of the product.
