Side dish of grilled artichoke segments with cherry tomatoes and basil
Ingredients:
250g of grilled artichoke segments in oil
200g of cherry tomatoes
2 tablespoons fresh basil, chopped
2 tablespoons extra virgin olive oil
Juice of half a lemon
Salt and Pepper To Taste.
Instructions:
Preheat the oven to 180°C.
Arrange the cherry tomatoes on a baking tray lined with baking paper and sprinkle them with a spoonful of extra virgin olive oil, salt and pepper. Bake in the oven for about 15-20 minutes until the cherry tomatoes soften slightly.
In the meantime, in a pan, heat a spoonful of extra virgin olive oil and add the grilled artichokes. Sauté for a few minutes until heated through and lightly browned.
Add the roasted cherry tomatoes to the pan with the artichokes and mix well.
Squeeze the juice of half a lemon over the artichokes and cherry tomatoes and add the chopped fresh basil. Stir gently to combine all the ingredients.
Taste and adjust salt and pepper if necessary.
Transfer the side dish of artichokes and cherry tomatoes to a serving dish and serve hot as an accompaniment to your main dishes.
