Pecorino Romano is a true gem of Italian gastronomy, with a rich, complex, and slightly spicy flavor, and a history that dates back to ancient Rome. It was a key feature at imperial banquets and a staple in the rations of Roman legionnaires over 2000 years ago. As early as the first century AD, the writer Columella described the production of Pecorino, a process that remains unchanged for Pecorino Romano today. While its name recalls ancient Rome, its production has been centered in Sardinia for over a century. According to the poet Virgil, it was the cheese of the legionnaires, with a daily ration of one ounce (27 grams). Today, Pecorino Romano PDO is one of the most exported Italian cheeses to the United States, cherished for its unique flavor and millennia-old tradition.
