Although its name recalls ancient Rome, its manufacturing has mainly been based in Sardinia for over a century. As the poet Virgil recorded, it was the cheese of the legionaries, who were allotted a daily ration of one ounce (27 grams). Today, Pecorino Romano PDO is one of the most exported Italian cheeses to the United States, cherished for its distinctive flavor and ancient heritage.
