How to Make Neapolitan Pizza at Home
Who doesn’t love pizza? And especially, who doesn’t love homemade Margherita pan pizza? Here you will learn how to prepare pizza dough simply and professionally!
INGREDIENTS (for 4 people)

350 gr flour 00 (for flour, we recommend Caputo Nuvola or Caputo Pizzeria)

250 gr water

3 gr fresh beer yeast (or Caputo dry yeast)

10 gr salt

10 gr extra virgin olive oil

300 gr peeled tomatoes
-
250 gr mozzarella
-
q.b. basil
Preparation
The preparation is time-consuming, but don’t worry, the steps are simple, and the result will please you! If you want to make pizza on a Saturday, start on Friday.
What to do the day before?
8:00 PM THE DAY BEFORE
Take a large bowl, add the water, and dissolve the yeast in it.
Add about 200 g of flour and start stirring. Once the mixture is smooth enough, add the remaining flour, salt, and oil, and continue stirring.
When the dough is smooth and homogeneous, cover it with plastic wrap and let it rest for at least 15 minutes.
Around 8:30 PM
After the 15 minutes, dust the work surface with flour and knead the dough by stretching it and then folding it on itself for about 5 minutes.
Let the dough rest for about 15 minutes and knead it again for 5 minutes.
In the end, you should have a smooth and compact dough, but not sticky.
Grease a bowl with a little olive oil, place the dough ball inside, and cover it with plastic wrap. Let it rest overnight in the fridge.
4:00 PM THE NEXT DAY
After the resting time, dust the work surface with flour and take the dough.
Fold the dough into 3 parts, bringing the short sides to the center of the dough, then place it with the folded side down into the bowl you used before, and let it rest for about 3 hours.
In the meantime, cut the mozzarella into cubes and let it drain for about an hour. Crush the peeled tomatoes with a fork, and season the tomato sauce with oil, salt, basil, and a pinch of salt.
7:00 PM
After the dough has rested, dust the work surface with flour and take the dough.
Roll it out gently with your fingertips from the edge towards the center to avoid disrupting the rising bubbles.
Slowly stretch the dough until it reaches the desired size. If the dough is too elastic and hard to roll out, you can wait for 5 minutes and try again.
Turn the oven to full heat and preheat for about 30 minutes.
That’s it
Take a pizza pan and grease it with oil. Place the dough in the baking pan.
Carefully spread the dough again until it is flush with the edge of the pan. Cover the dough with the tomato sauce and then bake it on the lowest rack of the oven.
Bake in the preheated oven for about 10-15 minutes. Add the mozzarella cheese on top, then move the pizza to the top rack of the oven and bake for another 5 minutes.
