Carbonara abroad
Carbonara is one of the most well-known Italian dishes abroad.
There are several legends surrounding the creation of this dish, the most credited one dates its origin back to 1944 and involves the United States Army, to whom it was served as a meal.
A dish that combined American habits with the quality of Italian products and cuisine: eggs and bacon, which in Italy was replaced by guanciale.
And so, carbonara, loved all over the world, has earned its very own international day: Carbonara Day, celebrated on April 6th.

How to prepare an authentic Carbonara (Carbonara DOC)
The ingredients you need are few, yet together they create a true masterpiece.
But you’ll have to make a choice: long pasta or short pasta?
Here’s what the Carbonara Kit includes:

1 x Afeltra Rigatone artigianale di Gragnano IGP – 500 g

1 x Afeltra Spaghettone artigianale di Gragnano IGP – 500 g

1 x Gi.An Ground Black Pepper – 35 g
-
1 x Pecorino Romano Scorza Scura DOP – 250 g
-
1 x Guanciale di Norcia – 250 g
Instructions for use
Preparing carbonara is easier than you think. Just follow all the steps:

Cut the guanciale into strips, cook it in a non-stick pan until it releases its fat, then set it aside.

Grate the pecorino, add it to the egg yolks (one yolk per person + 1 extra) and to the pepper. Mix until you obtain a cream, then add the fat.

Boil water for the pasta, choose your preferred shape, and save a glass of the cooking water before draining it al dente.

Combine the cream with the pasta and add a bit of the cooking water. Toss everything with the heat off and then… enjoy your meal!
