Alce Nero farro pasta is mainly made from medium spelt or dicocco spelt, so named because it typically contains 2 grains per spike. Sowing generally occurs in autumn, but in colder mountainous areas, it can be delayed until late spring.
The harvest of spelt is later compared to other cereals and is carried out in late summer, with particular attention given during the threshing phase to avoid breaking the grains. The spelt grains are first hulled and then transported to the De Vita Mill, a partner of Alce Nero. In a green area, far from main communication routes, the mill transforms the spelt into semolina, using advanced technologies and low-speed milling cylinders that preserve the grain's qualities as much as possible.
Finally, the semolina travels to Trentino, where the spring water from the Alps meets the skill of the Felicetti pasta makers, also partners of Alce Nero, giving life to 100% Italian, organic pasta guaranteed by the Alce Nero Group partners.
