The term derives from “cannello” – “large tube” – and it is believed that this dish was invented in the first half of the 19th century in Campania by the chef Vincenzo Corrado. In his book “Il Cuoco Galante” he gives a recipe for a large Pacchero filled with meat and truffle, covered with meat sauce, and baked in the oven.
