The dough is left to rise for 72 hours, in order to reach the optimal development: only in this way you can appreciate its extraordinary softness! The glaze made of sugar, almonds, and egg white is poured on the product, then covered with sugar granules and whole, unpeeled almonds. Once baked, the dove cools upside down for 8 hours, to create a soft and airy structure.
