Busiate with Pistachio Pesto and Cherry Tomatoes
Ingredients:
250g of classic Sicilian busiate
50g of pistachio pesto
150g of cherry tomatoes
30g grated cheese (such as Sicilian pecorino)
Extra virgin olive oil
Salt and Pepper To Taste.
Fresh basil leaves for garnish
Instructions:
Start by cooking the busiate in plenty of salted water following the instructions on the package. Drain them al dente, reserving a little of the cooking water.
In a pan, heat a drizzle of olive oil over medium heat. Add the halved cherry tomatoes and cook them for a few minutes until they start to release their juices. Add a pinch of salt and pepper.
Add the pistachio pesto to the pan with the cherry tomatoes and mix well. Add a little busiate cooking water to obtain a creamy consistency.
Add the drained busiate to the pan and mix gently so that they are well coated with the pistachio pesto and cherry tomatoes.
Serve the busiate on individual plates, sprinkle with grated cheese and garnish with some fresh basil leaves.
