Preparation and cooking method: Rinse the chickpeas and soak them in cold water for 8-12 hours. Discard the water and rinse them. Place them in plenty of cold water, bring to a boil, and cook over moderate heat for approximately 150 minutes. In a pressure cooker, 45 minutes from the start of the whistle is sufficient. Salt should be added at the end of cooking.
