A ready-made Sugo all'Assassina makes it easier to prepare a punchy pasta dish without starting from a soffritto. It is useful when you want tomato and chilli pasta on the table in just a few minutes.
- Heating in the pan
Pour the sauce into a wide pan and warm it over a medium heat for 3–4 minutes. Stir often to stop the tomato from sticking to the bottom. - Dressing the pasta
Cook the pasta al dente and transfer it straight into the hot sauce. Keep 50–70 ml of cooking water aside to adjust the texture. - Chilli intensity
Taste before adding more chilli. The heat comes through more clearly when the sauce is served hot, at around 60 °C. - Storage after opening
Once opened, keep the jar tightly closed in the fridge and use it preferably within 3–4 days, as stated on the label.
Try changing the pasta shape depending on the texture you want. Spaghetti give a more classic result, while short pasta holds the sauce better.
