The must is then fermented in steel tanks before being macerated and bottled. In Piedmontese Dolcetto means ‘sweet in acidity’, a more than fitting definition as it is one of the most versatile wines of the region. Its ruby colour and fruity flavour make it a perfect match for a variety of dishes.”
