How long should dough made with Caputo Alba flour prove?
There is no single proving time, as it depends on the recipe, yeast quantity and room temperature. As a practical reference, Caputo’s babà recipe allows the shaped dough to prove at room temperature until it reaches the top of the mould, which takes around 90 minutes in a home kitchen.
