Spelt flour is useful for Italian-style baking when you want a more rustic flavour than soft wheat flour. It works well in simple recipes such as focaccia, crackers, fresh gnocchi and jam tarts.
You can use spelt flour in these Italian recipes:
- Spelt focaccia
- Rosemary spelt crackers
- Fresh spelt gnocchi
- Spelt jam tart
Use it on its own for a stronger flavour, or mix it in equal parts with soft wheat flour for a more open crumb. For focaccia and crackers, work the dough at 24–26 °C and leave it to rise until doubled.
