Priest's chestnuts are a typical Christmas product from Irpinia, Campania. Originally prepared only in this region, they use ancient production techniques. Fresh chestnuts in shell are dried on wooden racks over fires fueled by chestnut wood for 15 days. Subsequently, they are toasted and immersed in water or wine to flavor and rehydrate. The "baked" chestnuts are shelled before cooking, while the "flies" are suspended awaiting consumption. Today, dry chestnuts are approved and appreciated on the market for their sugary flavor and long shelf life.
