Italians, for generations, have always made coffee with a moka. In fact, in every home there is at least one! In recent decades, with the emergence of time and effort saving coffee machines, some people have started using them with special pods from major Italian brands, such as Borbone.

Moka, or coffee maker, is a coffee maker created in 1933 by Alfonso Bialetti. That is why, in Italy, the most famous brand bears this name: Bialetti. Over the years it has become world famous with millions of reproductions of examples, representing Made in Italy.

It has an octagonal shape made of aluminum or steel with a replaceable gasket and a Bakelite handle. There are many imitations on the market but with a different number of sides or a cylindrical shape. Depending on the number of people for whom coffee is prepared, there are different sizes indicated in “cups” for example: cup for four people, cup for one/two people etc. Remember: don’t wash the moka with soap, only water.

Why is it named this way? The origin of the name refers to the port city of Mokha, Yemen, from where ships loaded with coffee beans departed for the West. In fact, as opposed to soluble coffee, which is not at all appreciated by Italians, ground coffee is used.

How to make italian moka coffee

Making coffee with a moka pot is not difficult; here are the steps to follow:

  1. Fill up the bottom chamber of the moka pot with filtered water. The water level should be approximately an inch below the rim.
  2. Place the filter basket into the bottom chamber and fill it up with ground coffee (approximately 3 quarters of the way up the basket).
  3. Screw the upper chamber onto the moka pot.
  4. Place the brewer on top of a hob at a medium heat. Wait for all the water to pass through the coffee and into the upper chamber (should make a bubbling/hissing sound once the brew is finished).
